Pomegranate Glazed Salmon

Recipe Yield 4 cups

  • 1 – 12 oz package of fresh or frozen cranberries, rinsed and drained
  • 1 unpeeled navel orange, cut into eighths
  • 3/4 cup granulated sugar
  • 1 – 1 1/2 tsp ginger puree
  • 1/2 tsp salt
  • 1 bag (7 oz) PerfectGEMs Pomegranate Arils

Pomegranate, Orange and Cranberry Relish

This easy-to-prepare relish is a hit with turkey, pork or lamb, or serve it as a side with fresh fruit or yogurt. Freez it, scoop it, add a squeeze of lime for a more refreshing summer treat!


Place half the cranberries and half the oranges into food processor. Process until mixture is evenly chopped. Transfer into a bowl, repeat with remaining cranberry and orange slices. Transfer to bowl. Stir in sugar, ginger puree, salt and PerfectGEMs Pomegranate Arils.
Store in refrigerator or freezer.
