Pomegranate Glazed Salmon

Recipe Yield 2 servings

  • 1 bag (7 oz) of PerfectGEMs Pomegranate Arils
  • 1 teaspoon Dijon mustard
  • 1 teaspoon balsamic vinegar
  • 1~2 teaspoons soy sauce
  • 1/2 teaspoon lemon zest
  • 1 tablespoon butter
  • 2 salmon fillets
  • sea salt
  • fresh ground black pepper
  • 2 teaspoons olive oil

Pomegranate Glazed Salmon

Marinate the fish in 2 tsp. olive oil and sprinkle with sea salt and freshly ground black pepper. Let sit for about 20 minutes while you prepare the glaze. Pour 1/2 bag of PerfectGEMs Pomegranate Arils in a strainer set over a small bowl. With the fork or the back of a spoon, press the arils against the strainer, forcing the liquid into the bowl. Place the juice, lemon zest, Dijon mustard, balsamic vinegar and soy sauce in a small non-reactive saucepan and cook over medium heat. While the glaze is reducing, get a cast iron skillet pretty hot and place fish skin side down (without moving) and let sear for about 1-2 minutes. Turn the fish over and while it's cooking on the other side, carefully peel away and discard skin. Let cook for about 4-5 minutes or until a nice golden brown color, flip the fish over one last time and let sear on the side you removed the skin from. Remove to a plate and let sit, put the 1 Tbsp. of butter in the glaze and stir until just melted and drizzle over fish. Sprinkle remaining 1/2 bag of PerfectGEMs Pomegranate Arils on fish and serve.

Pomegranate Chutney

Recipe Yield 1-1/4 cups

  • 1/2 cup red currant jelly
  • 1/3 cup finely chopped green onions, including tops
  • 1 bag (7 oz) of PerfectGEMs Pomegranate Arils
  • 1 tbsp minced fresh ginger or ginger puree
  • 1 tbsp minced fresh jalapeno chile
  • 1/4 tsp ground Chinese Five Spice
  • 1 tbsp lemon juice
  • Salt and pepper

Pomegranate Chutney

This recipe is a great accompaniment for pork, chicken and beef. It's easy to make and can hold for weeks in the refrigerator. I've also used it as a fantastic ingredient in lettuce wraps.


Put currant jelly in a 2-cup glass measuring cup. Heat in a microwave oven at full power (100%) until softened, about 20 seconds. Stir in green onions, PerfectGEMs Pomegranate Arils, ginger, jalapeno chile, Chinese Five Spice and lemon juice. Add salt and pepper to taste. Let stand about 15 minutes before serving.

Bacon Pomegranate Stuffing

Recipe Yield 6~8 servings

  • 1 bag (7 oz) of PerfectGEMs Pomegranate Arils
  • 4 strips raw bacon, cut into 1" pieces
  • 1/2 cup celery, chopped
  • 1/2 cup onions, chopped
  • 1/3 cup raisins
  • 12 oz stuffing mix
  • 2-1/2 cups chicken broth (low-sodium broth optional)
  • 1 tbsp ground sage
  • 1 stick (1/2 cup) butter
  • Salt and pepper to taste

Bacon Pomegranate Stuffing

Directions: In a large sauté pan, cook bacon over medium heat until cooked, but not crispy. Add butter, celery, onions, sage and raisins. Sauté for about 5 – 7 minutes over low-medium heat. Reduce heat to low. Add chicken broth and stuffing mix. Fold together with spoon until liquid is absorbed. Fold in PerfectGEMs Pomegranate Arils. Place in a medium casserole (8 ½ x 11 inch pan). Bake stuffing for 40 minutes, uncovered, in a 350 degree oven. Allow to sit for 10 minutes prior to serving.
